1 1/2poundscanned salmon or 2 1/2 c. fresh
1/2cupchopped onion
1/4cupmelted butter
1 1/3cupsbread cubes
3 eggsbeaten
1/4cupparsleychopped
1 teaspoonpowdered mustard
1/2teaspoonsalt

Flake. In a frying pan, cook onion in butter till tender. Add bread cubes, eggs, parsley, mustard, salt, and salmon. Mix well. Let stand 0 minutes. Shape into cakes. Coat with progresso Italian flavored crumbs. Fry in pan with oil - medium heat but not smoking. Cook slowly.Serving Ideas: On bun or by itself with sauce on the side.
