6 eggs

2 teaspoonsvanilla

Heat cream and milk in saucepan till bubbles start to form around edges. Wisk 6 eggs in large bowl. Add in 3/4 cup sugar and / tsp. salt. Gradually add hot milk mixture while whisking. Add vanilla. In nonstick pan, heat the other 3/4 cup sugar. Melt and heat until it turns a golden brown. It will get dark very quickly so pay attention. Immediately coat either ramekins (baking cups) or the bottom of a round casserole dish with the hot caramelized sugar. It is difficult to work with and you can heat it back up if it hardens too quickly. Put the casserole or ramekins in a shallow baking pan and add very hot water to about half way up the side of the dish. Bake in 400-degree oven until a knife inserted near center comes out clean. Ramekins should take about 5 - 0 minutes casserole may take 5 - 40 minutes. I am unsure of the time for the casserole. Take out of water and let cool. Refrigerate for at least hours before serving. To serve, unmold on plate or platter by running knife around edges. Put plate on top of mold (flat side against top of dish) and quickly turn upside down. If there is crystallized sugar still in the dish you can microwave it to melt it, let it cool some and then pour over the unmolded flan.
