Bread Pudding

3 1/2cupscubed day old breadabout four buns
5 largeeggs
2 largeegg yolk
2/3cupsugar
3 cupsmilk
2 1/2teaspoonsvanilla
1/2cupraisins, if desired
cinnamon and or nutmegto taste

Let bread stand at room temp. to dry out slightly. Wisk eggs, yolks, and sugar. Wisk in milk and vanilla. Add bread cubes and raisins, if desired, and stir gently to combine without breaking up the bread. Pour into large shallow buttered baking dish. Set in roasting pan and place in oven. Pour hot tap water into roasting pan to reach halfway up sides. Bake till pudding is just set in the center, about hour, stirring each 0 minutes. Do not over bake. Remove from water bath and cool. Chill till very cold, about hours. Remove from fridge and wait 0 minutes before serving. This is good with real maple syrup on top or hot with ice cream on top.
